Blue marlin
An iconic species of billfish and one of the fastest swimmers, blue marlin are capable of prodigious bursts of speed in open waters and this, combined with a weapon-like bill, makes them an ultimate ocean predator.
Their appearance is nothing short of magnificent, adorned with cobalt-blue upper-sides fading to silvery white underneath. HOW TO COOK IT?
Their loins are a light pinkish colour, and have good levels of omega-3 oils, resulting in a natural sheen. It has a firm, almost steak-like texture which is great both raw and cooked, so the options are almost endless for their preparation.
