New Zealand oysters

Crassostrea gigas
Grown in New Zealand’s beautiful harbours and coastal bays, oysters are a major export for the country and also a much-loved product for the domestic market.
They uphold an almost-religious following of connoisseurs who enjoy these elegant seasonal gems at many of New Zealand’s top oyster bars and restaurants or at home paired with a nice cold beverage.
New Zealand oysters need little introduction in Tahiti, with millions of dozens sent here over the years. Our oysters are sourced from the very best NZ producers, who strictly adhere to the principles of sustainable aquaculture, environment-friendly farming techniques and water management. Each process is carefully regulated to ensure food safety and to result in the best quality product – perfect oysters in sashimi-grade condition.
NZ oysters typically have a deep-cup, high meat-fill and exceptional flavour, relating back to the ‘merroir’ of the cool, clean, nutrient rich waters in which they were farmed.

HOW TO COOK IT?
The first two serving factors are important – raw, and on a bed of ice. The rest is up to individual interpretation. Many swear by eating them au naturel in order to taste the subtle characteristics and hints of minerality, sea-spray, cucumber etc, and many like to add acidic elements like lemon juice, vinegar, mignonette dressing. Others prefer a splash of tobasco, some horseradish or cracked black pepper… the choice is yours… ‘the world is your oyster’.
