Moroccan Striped Marlin Kebabs

Moroccan Striped Marlin Kebabs is a flavorful dish that features marinated and grilled marlin loin. The recipe calls for 1.5kg of striped marlin loin that is marinated in a mixture of coarsely chopped red onion, olive oil, freshly squeezed lemon juice, finely chopped cilantro, paprika, salt, ground turmeric, freshly ground black pepper, chili powder, and minced garlic cloves. The marinated marlin is then skewered and grilled, resulting in a savory and tender meal that is perfect for any seafood lover.

Ingredients

1.5kg striped marlin loin 1 cup coarsely chopped red onion 1/3 cup olive oil, more for the grill 3 tablespoons freshly squeezed lemon juice 2 tablespoons finely chopped cilantro 1 teaspoon paprika 1 teaspoon salt 1/2 teaspoon ground turmeric 1/2 teaspoon freshly ground black pepper 1/2 chili powder, more to taste 2 garlic cloves, minced

The steps

Gather the ingredients. Cut the fish into 1-inch pieces. Place pieces in a resealable bag. In a small bowl, combine the onion, oil, lemon juice, cilantro, paprika, salt, turmeric, pepper, chili powder, and garlic. Pour this mixture into the bag with fish. Seal bag, rotate to mix thoroughly and allow to marinate in the refrigerator for 30 minutes. Meanwhile, prepare a medium-high (220-240 C) gas or charcoal grill fire. Brush the grill grates a number of times until they are very clean. Brush the grates with oil several times to ensure a non-stick surface. Remove fish from bag and discard the marinade. Thread fish onto skewers. Place fish kebabs on the grill and cook, turning occasionally, until the fish turns opaque and flakes easily, about 10 minutes total. Remove from grill and serve. Tip: You can use wood or metal skewers to make the kabobs. If you are using wooden skewers, make sure to soak them in water for at least 30 minutes or more before threading fish to avoid burning them on the grill.
