Traditional Tahitian Poisson Cru (Albacore)

This recipe is for traditional Tahitian Poisson Cru made with sashimi-grade albacore loin.

Other ingredients include tomatoes, cucumber, carrot, limes, onion, spring onion, and fresh coconut milk.

Ingredients

400g sashimi-grade albacore loin

2 x tomatoes

1 x cucumber

1 x carrot

5 x limes

¼ onion (white or red)

Spring onion

Fresh coconut milk

The steps

Cut the fish into cubes, careful to cut across the grain where possible to give the best texture

Marinate in lime-juice for 3-4 minutes, careful not to ‘over-cook’ the delicate flesh

De-seed the tomatoes and dice, grate the carrot coarsely, de-seed the cucumber and slice into half-moons, chop the spring onion and onion.

Pour off the lime juice and add all the vegetables

Stir in the coconut milk and salt & pepper to taste.

Plate each bowl with a large lettuce leaf in the bottom and the poisson cru spooned on top.
