Under the term ‘trevally’ there are grouped several different species and several genera of fish from the Jack family.

They can be recognized by their oval bodies, usually silver in color with darker blue, spotted or even yellow variants with vertical streaks, and the presence of bony growths along the lateral line. The trevally is a reef fish hunter and is therefore caught near coral reefs inside or outside the lagoon.

However, sometimes deep-sea tuna fishermen land large individuals if they have fished relatively close to barrier reefs. Its white to slightly pink flesh with fine flavor and texture makes it a delicacy.

HOW TO COOK IT?

The trevally, and Jack species in general, are greatly appreciated all over the world. These fish have firm flesh and are a delicacy grilled whole on the barbecue or roasted in the oven but are also delicious cooked as pavé, ‘a la plancha’ or even pan fried.
